    The last recipe in our FRESH Snacks series is a Vietnamese favourite + super easy to make at home, check it out below!

    Week Five

    ~Rice Paper Rolls~

    Rice Paper Rolls

    Rice paper rolls are a traditional Vietnamese entree that taste delicious with basically any fillings - vegetables, rice noodles, tofu, chicken prawns...even fruit!!

     

    Recipe

    INGREDIENTS:

    • 1 packet rice paper roll wrappers
    • 1/2 cup shredded iceberg lettuce
    • 1 packet or 200 grams bean sprouts
    • 1 small carrot peeled and grated
    • 1 medium Lebanese cucumber, peeled to ribbons
    • 1 medium avocado, cut into strips
    • 1 packet rice vermicelli noodles
    • sauce for serving - sweet chilli, peanut satay - anything you like!

    METHOD:

    1. Cook your rice vermicelli noodles according to the packet instructions (usually by adding boiling water and letting them steam for 5 minutes).
    2. Chop all vegetables or fillings and keep aside.
    3. Pour warm water into a large bowl or container half full. Dip 1 rice paper wrapper in water until it becomes soft and malleable.
    4. Place dipped rice paper roll on to a plate and begin filling the rice paper roll.
    5. Roll the rice paper roll as per the diagram below.
    6. Serve with your favourite sauce and enjoy!

    FRUIT PIZZA...this is the perfect afternoon snack/dessert that is so easy to prepare! It also allows for your own creative direction... add whatever fruit or toppings you desire! The origin of this delicacy is unknown, but it is speculated to have originated from California when a cook at a pizzeria accidentally added strawberries to a pizza!

    RECIPE

    INGREDIENTS:

    • 1 whole watermelon (will make approximately 4 bases)
    • Toppings! Pretty much whatever you want - choose your favourite fruit and toppings - here's a few suggestions below (by no means an exhaustive list...!).

    --> banana slices   --> strawberries       --> shredded coconut       --> kiwi fruit        --> maple syrup

    --> mint leaves      --> blueberries         --> cashews, almonds or walnuts                   --> cinnamon

    METHOD:

    1. Chop the whole watermelon into 2CM thick slices lengthways - it should look something like this...

    2. Chop the slices into wedges like a pizza, keeping them in the same position as a full circle

    3. Add your favourite toppings and enjoy!

    Week THREE of FRESH Snacks is something a little different, with a healthier take on a traditional bite-sized potato treat - tater tots!!

    ~Broccoli Tater-Tots~

    For Week three, F.R.E.S.H and Mospress proudly presents the Broccoli Tater Tots!!! these FRESHLY made Broccoli Tots are a healthy twist on the original fried potato version, with FRESH and green ingredients!!!
    RECIPE

    INGREDIENTS

    • 2 cups of broccoli florets
    • 1 large egg
    • ¼ cup diced yellow onion OR 1/4 cup spring onion, diced
    • ⅓ cup cheddar cheese
    • 2/3 cup breadcrumbs (gluten-free, regular or panko will work!)
    • 2 tablespoons parsley ( or cilantro, rosemary, etc.)
    • ½ teaspoon salt
    • ½ teaspoon pepper

    METHOD

    1. Preheat the oven to 200°C. Grease a baking sheet with a thin layer of oil or line with parchment paper and set aside.

    2. Blanch the broccoli in boiling water for 1 minute, quickly removing after. Drain well.

    3. Chop broccoli finely and mix together the egg, onions, cheddar, breadcrumbs, and seasoning.

    4. Spoon around 1.5 tablespoons of mixture into your hands and gently press between your hands to form firm balls, then shape into a tater-tot shape. Now, Place on your prepared baking sheet.

    5. Bake for 20-25 minutes, turning the tater tots over half way. and turn them over.

    6. Serve with tomato sauce (or any sauce you desire!).

    In week two, Mospress & F.R.E.S.H cooked up some bite-sized pikelets for after school snacks! These are so simple and quick to make, and taste great topped with any type of fruits and maple syrup! With the addition of a gluten and dairy free member this week, we made an alternate recipe that still tasted completely delicious without the milk and gluten! Read below for the recipes...

    RECIPE:

    INGREDIENTS

    • 3/4 cup milk (for dairy free: any plant based milk - we used soy!)
    • 1 egg
    • 1 cup self-raising flour (for gluten free: 1 cup gluten free self-raising flour)
    • 1 tablespoon caster sugar
    • Melted butter or oil to brush pan
    • Toppings of choice: we used sliced strawberries, bananas and blueberries with icing sugar dust and maple syrup!

     METHOD

    1. Whisk the milk and egg together in a bowl

    2. Sift the flour and sugar together into a bowl and add a pinch of salt.  Pour the egg and milk mixture together into the flour mixture.

    3. Mix well until combined.

    4. Heat up a non stick pan over media heat with a dash of oil or butter .

    5. Place tablespoons of batter onto the hot pan and flatten with a spatula

    6. Flip pikelets when bubbles start to burst on the top surface and they are golden brown.

    7. Serve with your favourite toppings of choice!

    Pizza Bites

    Mospress & F.R.E.S.H worked together this week on bringing you their first FRESH snack for students!

    Week One

     

    ~Pizza Bites~

    These bite-sized snacks are an ideal choice for parties, gatherings...even after school! Rather than using a traditional base for these treats, we opted for a quicker (and healthier!) version using vegetables as the base! They cook much faster and taste DELICIOUS!

    RECIPE

    Serves 6

    Ingredients

    • 1 tablespoon of olive oil
    • 2 medium/large zucchinis
    • 6 Portobello mushrooms (stems removed) (washed and dried with a paper towel)
    • Salt & pepper
    • 1/3 cup of tomato pasta sauce
    • 1/2 cup of shredded cheese (we used mozzarella)
    • 1/4 cup of pepperoni or salami bits (finely sliced)
    • 1 punnet of cherry tomatoes, sliced
    • 1 tablespoon of Italian seasoning

    Procedure

    1. Preheat oven to grill
    2. Wash the portobello mushrooms and arrange on a large baked sheet , stem-side up
    3. Wash the zucchinis, and cut into large chunks (1-2cm in width). Place these an another baking sheet at least 1cm apart from eachother.
    4. Add toppings to your mini bases - first starting with the tomato sauce, then add your desired amount of tomatoes, cheese and salami. Top with italian seasoning.
    5. Place the baking trays into the oven and cook until the cheese has melted, about 10 minutes.
    6. Serve immediately and...enjoy!
